Yes, I'm Talking About Avocado Toast

I eat it just about every morning. If you follow me on Instagram (wait, you're NOT??) you know from my stories that I make breakfast, coffee and then eat it in bed. Yeah, that's my normal morning. I make no excuses or apologies. I sit in bed and eat breakfast while I slowly waking up, because let's be real I can make coffee and avocado toast in my sleep, I ask my Google Home to tell me the news. By the time my Google home is finished updating me about the recent news highlights, the world and weather, which takes only about 15- 20 minutes, I'm wake and running tight on time. 

Here's the thing- avocado toast get's a lot of crap. But really, it's halfway decent meal. Throw a fried egg or slice up a hard boiled egg on top and it's well rounded. Carbs, good fats, greens, with the egg- protein. The other thing is you need to dress the avocado. You can't just mash avocado on top of toast and be done. Just like lettuce in a bowl doesn't make it a salad- putting avocado on toast doesn't make it a breakfast. 

My avocado toast dressing recipe consists of the following and in this order on top of mashed avocado: 

  • Olive oil 
  • Lemon juice (just get the little lemon bottle, don't mess with wedges. IT'S MORNING FOR GOODNESS SAKES)
  • Salt and pepper - just enough don't over do it
  • Crushed red pepper- likewise as above, just enough
  • Chia seeds- I always have them on hand and toss them into everthing

That's it! Depending on season and what I have on hand I've also used Trader Joe's Everything Bagel Seasoning, an Ancient Grains blend and paprika. The great thing is it's endless adaptable. I could see this going a million ways. Below are just a few alternative options. 

  • Asian Avocado Toast: sesame seed oil, lime juice, topped with sesame seeds, shredded nori (slice it into a flakes) and bonito flakes. Bonus: top with a soy marinated egg
  • Nutty Avocado Toast:  a nut oil (think hazelnut, peanut or walnut) drizzle and lemon juice, topped with seeds of our choice, toasted almond slices and big chunks of walnuts or pecans
  • Greeky Layered Avocado Toast: before the avocado spread a layer of tahini on your bread, then top with avocado, drizzle with lemon and olive oil, topped with crumbled feta, sliced of tomatoes, salt and pepper 

Next time you read something about avocado toast destroying the world, maybe try it first. The last thing is, avocado is good on all kinds of bread. Except maybe chocolate sourdough..that'd be a tough sell.  

This Week's Breadlist

  • I'm trying not to get sick. No, really. I know spring is here and we're (hopefully) moving out of the cold/flu season but I'm really trying not to get sick. Whenever I feel my throat getting achy and tender I brew up this Rishi turmeric and ginger tea. Just be careful not to spill any- turmeric stains and leaves behind a nice highlighter yellow mark. 
  • Julia Child never apologized. I don't know if do when friends are over, but I should take more credit for what I cook and bake than I do. I'm good at it and I don't know why I don't allow others to think I don't think I am. 
  • Kindle Unlimited has been a huge save with all my travel. I've finally read/listened to The Handmaid's Tale during my trip to Japan, and then promptly watched the Hulu adaptation once I was back in the States. Also borrowing magazines has curbed my airport impulse spending.
